Store cupboard staples – think tinned tomatoes and dried fruit – may not be the most fashionable food trend going, but since fresh produce has become harder to get hold of (and our favourite restaurants and cafes remain closed) these so-called processed foods have really come into their own. And while you might suspect it’s a trade off in terms of nutrition, our Ethnobotanist James Wong disagrees. In fact, in some cases he thinks simple store cupboard foods can be as healthy or even healthier than their fresh counterparts.
